Baked cod with courgette
Baked cod with courgette, cherry tomato, lemon zest, marjoram, chilli and garlic
This recipe serves two
Ingredients
2, 195 g Cod fillets, skin on
2 medium courgettes
1 tin cherry tomatoes
1 clove garlic
Zest of ½ lemon
2 tsp dried marjoram
1 tsp dried chilli
2 tbsp grated parmesan
1 tbsp extra virgin olive oil
Salt and pepper
Recipe
Top and tail the courgette then slice on the angle ½ cm thick
Mix all the ingredients in a bowl except the fish.
Spoon into an open Q bag, and carefully flatten out
Lay the fish on top skin side up
Make two, 2 cm folds then place on an oven tray and place in a preheated oven at 200 C for 15 – 20 minutes
Test the fish is cooked by removing the clear window. If the fish feel firm to touch and is white throughout, it is cooked, otherwise return to the oven for 5 minutes

Place in a preheated oven at 200 C for 15 – 20 minutes
